No Fat Fruity Muffins

Introduction

No fat is used in these muffins and they are great for breakfast! No fat is used in these muffins and they are great for breakfast!
Number of Servings: 18

Ingredients

    2 large eggs
    2 very ripe bananas
    2-1/4 c. flour
    1 tsp salt
    1 tsp baking soda
    1/2 c. sugar or substitute
    1/4 c. brown sugar
    1/4 c. milk
    1/4 to 1/2 c. chopped nuts
    1/2 c. chopped apples

Directions

Beat 2 eggs with 2 very ripe bananas. Add 2-1/4 c. flour, 1 tsp salt, 1 tsp. baking soda, 1/2 c. sugar or substitute, 1/4 c. brown sugar - mix well. Add 1/4 c. milk. Add 1/2 c. chopped tart apples and 1/2 c. chopped walnuts. Put into 18 paper lined muffin cups. Bake at 350 for 20-25 minutes.
