Introduction

My family asks me to bring this to every family dinner. They love it! It can be all assembled the day before so that all you have to do is put on the cracker crumbs and bake. My family asks me to bring this to every family dinner. They love it! It can be all assembled the day before so that all you have to do is put on the cracker crumbs and bake.
Number of Servings: 12

Ingredients

    2 - 10oz pkgs frozen broccoli, cooked & drained
    1 can reduced fat cream of mushroom soup
    1 cup shredded cheddar cheese
    1 cup Hellmann's Light Mayonnaise
    2 tsp minced onion
    2 beaten eggs
    1 sleeve Ritz crackers, crushed

Directions

makes about 12 (3/4 cup) servings

Cook broccoli and drain really well. I spread it on paper towels to remove more moisture.

Add all ingredients to a bowl except for crackers and mix well. Place in a 1 1/2 quart casserole dish. Sprinkle crushed crackers on top. Bake uncovered at 350 degrees for 1 hour.
