CHICKEN PICCATA

Ingredients

    6.75 OZ CHICKEN(I USE G.V CHICKEN FROM WAL-MART)
    1 TBLSP ALL-PURPOSE FLOUR
    1/8 TSP BLACK PEPPER
    1 TSP EXTRA VIRGIN OLIVE OIL
    2 TBLSP CHICKEN BROTH
    2 TBLSP LEMON JUICE
    2 TSP CAPERS(OPTIONAL)

Directions

Pound boneless skinlee chicken breast between wax paper to 1/4 inch thick.
Combine flour and pepper spread on a paper plate; coat chicken with mixture.
Heat olive oil in skillet until sizzling. Saute' chicken breat until lightly brown on each side, about 3 min. per side.
Add chicken broth,lemon and capers to chicken; let boil for 3 min. or until chicken is cooked thoroughly,turning chicken in sauce.
