Mediterannean Lentil Soup

Introduction

This is great for those of us trying to find other sources of protein besides meat. This will remind you of your favorite Mediterranean restaurant's lentil soup. Number of Servings: 12

Ingredients

    2 cups (1 lb.) red or green lentils
    1/4 cup olive oil
    2-3 yellow onions (chopped, 3 cups total)
    3 garlic gloves, chopped
    2 leeks (rinsed well, chopped)
    6-8 carrots, peeled and medium chop
    4-5 stalks of celery, medium chop
    1 can (14 oz.) diced tomatoes
    1 T. kosher salt
    1 1/2 T fresh ground pepper
    1 T thyme
    1 T cinnamon
    1/2 T cardamom
    12 cups low-sodium vegetable stock (could also use chicken)

Directions

1. Put the lentils in a bowl, cover with boiling water. Let sit for 15 minutes, stirring occasionally. Drain and rinse.
2. In a large stock pot, heat olive oil over medium heat. Add onions, garlic, and leeks. Saute for 15-20 minutes, stirring occasionally, until soft and translucent.
3. Add carrots and celery. Saute for another 10 minutes. Also, add all spices at this time.
4. Add half of the lentils and all of the vegetable stock and tomatoes. Cover and bring up to boil, then lower to a simmer for 20 minutes.
5. Add the rest of the lentils. This allows some of them to still hold their shape. Continue simmering for 15-20 minutes.
