Quick Tuna Rice No Bake Casserole

Ingredients

1 Can Tuna (Solid White Albacore)
1 Tbsp Mayonnaise (Regular - NOTE - fat content of this recipe is based on regular mayonnaise)
1.5 Cup Frozen Peas
.5 Cup Non-Fat Milk
1 Can Cream of Mushroom Soup
1 Cup Brown Rice
Directions
Add rice to rice cooker or sauce pan with about 2 cups of water (depending on how you like your rice consistency)
Add Tuna, Mayo, Cream of Mushroom Soup, Peas and Milk to a different sauce pan and mix over medium heat until hot. Do not boil as it will scorch the milk and the peas will wilt. Remove from heat and cover with lid until rice is done.
Serve Tuna mix over Rice.

Very good! I made this stretch into 6 1/2c servings for about 162 calories per serving. I threw a little broccoli in, too. I put it all in a banking dish and mixed the rice in with it, just so it would make it harder for my 18 month old to throw the rice. He ate it by the fistful--approved! - 9/21/10
