Low sodium stir fry

This is something fairly simple I like to cook up now and then. It helps with my cravings without affecting my sodium count too much. This is something fairly simple I like to cook up now and then. It helps with my cravings without affecting my sodium count too much.Number of Servings: 6
Ingredients

Minute Rice Whole Grain Brown Rice, 3 cup
Onions, 1 cup, chopped
Bell Peppers, 0.5 cup, chopped
Egg Beaters, 1 cup
Extra Light Olive Oil, 2 tbsp
Smart Balance Buttery Spread, 2 tbsp
Garlic powder, 1 tsp
Directions
Chop onions and bell peppers to size desired.
(I like the sweet onions and red peppers but you can use whatever you like)
Cook rice according to directions.
While the rice is resting the last 5 minutes:
In a large skillet or wok, melt butter over low heat. Put in peppers and onions and reduce to simmer. Simmer about 5 minutes or until onions are tender. Add olive oil and garlic powder. Stir until well mixed.
Turn heat up on mixture to medium high. Dump rice into pan. Pour Egg Beaters directly over rice and begin stirring immediately. Keep stirring until eggs are cooked and everything is well mixed.
Serve!
Makes about six 2/3 cup servigs
Additions: You can add cooked chicken, pork, or beef to this recipe if you desire at the same time you add in the olive oil and garlic. Then it makes a main dish.
