Vegan Meatballs

Ingredients

1 cup boiling water
1/2 cup water
5 cups pureed or mashed, cooked beans
1 cup whole wheat breadcrumbs
1 cup bulgur (dry)
3 tbsp ground flax
1/2 tsp sea salt
1 tsp black pepper
1 tbsp ground oregano
1 tsp red pepper flakes
Directions
Preheat oven to 450 degrees.
Pour boiling water over the bulgur in a bowl. In another small bowl, combine flax with 1/2 cup warm water. Let these sit for a few minutes.
In a large bowl, add remaining ingredients, and bulgur and flax mixtures.
Make "meat" balls, and place on a cookie sheet.
Bake for 15 minutes.
Now, these are tasty but they will NOT hold together in a soup, stew or sauce. Your best bet is to for example. Serve on top of pasta or rice, THEN add sauce on top. I don't think i would put them INTO anything.
