Strawberry Lemon Poppyseed Muffins

Introduction

Number of Servings: 6

Ingredients

    Dry:
    1/2 cup Flax Seed Meal
    1/2 cup Whole Wheat Flour
    3/4 cup Kamut Flour
    1/4 cup Evaporated Cane Juice
    2 tbsp poppyseeds
    2 1/2 tsp Baking Powder
    1/2 tsp Baking Soda
    1/2 tsp Salt

    Wet:
    1/3 cup Nonfat Milk
    1/4 cup Unsweetened Apple Juice
    2/3 cup Nonfat Vanilla Yogurt
    2 egg whites
    zest of 1 lemon
    1/4 cup lemon juice
    and:
    6 oz of chopped fresh strawberries

Directions

Preheat oven to 400

Mix dry and wet ingredients separately and then combine. After thoroughly mixed, fold in berries. Pour into muffin tin and bake for 25-30 minutes.
