Stuffed Pork Chops

Introduction

I use these for special occasions, but they are easy enough for any day. I use these for special occasions, but they are easy enough for any day.
Number of Servings: 6

Ingredients

    6 8oz Pork Chops
    1/2 c. Progresso Italian Bread Crumbs
    Approx. 4 oz Provel Rope Cheese
    1/2 C. chopped green peppers
    1/2 C. chopped onions
    1/2 C. chopped mushrooms
    1-2 C. crab meat
    1 Tbsp Poultry Seasoning
    Any other seasoning you desire (to taste)

Directions

Butterfly the pork chops (sometimes the butcher will do this for you if you ask) and season both the inside and outside of the meat.

In a small bowl, mix bread crumbs, provel cheese, and crab meat. Set aside.

In a small pan, sautee the green peppers, onions and mushrooms in a tsp of olive oil until tender, yet still crisp. Add to bread crumb mixture and mix well until cheese is almost melted.

Stuff the butterflied chops with bread mixture and bake in a 350 oven for approx. 45-60 minutes until done. DO NOT OVER BAKE. Five minutes before removing from the oven, I usually add a spinich leaf and more provel to the top.
