These can be stuffed with ANYTHING :) Also, after cooling you can layer w/wax paper and freeze in a big ziploc until you need them. They nuke really well.I love one stuffed with 1/4 cup Friendship pineapple cottage cheese and fruit, good dessert or breakfast!

Ingredients

2 eggs
1 cup sifted besan (chickpea) flour
1/4 tsp. salt
1 tbsp. canola oil
1-1/2 cups 2% milk
1 pat butter (for pan)
Directions
Whisk together until smooth.
Heat 1 pat butter in 6" pan on med-high.
Remove from heat when adding crepe mix. - 2 tbsp. at a time. Don't flip them, just cook through on 1. side then turn onto paper toweling.
Makes 16 crepes.
