Smashed Beans

Ingredients

1 14 oz. can of beans, rinsed (I like pinto and great northern for this)
1 tsp. lemon juice
1 tsp. olive oil
dash of salt and pepper
chili powder
water to thin as needed, or use some of the canned bean "juice"
Directions
Drain and rinse the beans. Set aside some of the liquid if desired. Place all ingredients in mini food processor. Alternately, if you don't mind them chunky, you can mash them with a potato masher or fork.
Blend until well mixed, adding water for desired consistency and smoothness. Serve warm or cold. Makes 2.5 servings; 0.5 cups each.
I have served these warm over spinach, topped with red peppers; used them on Stepf's Mexican cornbread pizza crust; put them in burritos; and on top of nachos. Heck, you could just dip tortilla chips in it! :)
