Orange Spice Zucchini Bread

Introduction

A low sugar, cake-like zucchini bread with a twist. Spices, orange peel, and orange juice instead of the standard sugar give this bread plenty of flavor and a feeling of dessert, without the sweet. Ingredients

    3 cups whole wheat flour
    1 teaspoon salt
    1 teaspoon baking soda
    1 teaspoon baking powder
    1 tablespoon ground cinnamon
    1/2 teaspoon ground ginger
    1/4 teaspoon ground cloves
    3 eggs
    3/4 cups canola oil
    12 ounces orange juice concentrate, not diluted in to juice, at room temperature
    1 tablespoon fresh shredded orange peel, from a well-washed orange (preferably organic)
    2 cups fresh shredded zucchini
    3 tablespoons ground flax seed

Directions

Preheat oven to 350 degrees.
In a large mixing bowl, mix together flour, flax seed, salt, baking soda, baking powder and spices. When completely mixed, add eggs, oil and orange juice concentrate. Mix together well. When completely mixed, add zucchini and shredded orange peel. Mix.
Prepare two bread loaf pans with cooking spray. Divide mixture between the two pans. Add to oven, middle rack, and cook for 50-60 minutes at 350 degrees. Toothpick or knife in center will come out clean when ready.
Serves 16 servings total.
