Broccoflower Soup with Grains

Ingredients

    Olive oil, 1 tbsp
    Onions, raw, .5 cup, chopped
    Cauliflower, raw, 2 cup
    Broccoli, fresh, 2 cup, chopped
    Baby Carrots, raw, 10 medium
    Campbell's low sodium chicken broth, 8 cup
    Milk, 3.25%, .5 cup
    Cheddar Cheese, 1 cup, shredded
    Lentils, .75 cup
    Barley, pearled, cooked, .5 cup
    Pepper, black, 1 tsp
    Thyme, fresh, 0.5 tsp

Directions

In a large pot, fry onions in olive oil just until they start to turn golden. Add chicken stock and bring to a boil. Add veggies, pepper and thyme. The low sodium stock is salty enough for me, but add more salt if you want to.

In the meantime, in a small pot bring some water to a boil. Add lentils & barley and cook until tender.

Once the veggies are very soft (about 20 or so minutes) puree the soup with a hand blender or a regular blender. Return to the pot on medium heat. Add milk and heat through. Turn off heat and add cheese. Stir until melted then add the lentils & barley. Mix and serve.
