I made these with blueberries and they were ok. I would use orange juice next time instead of so much water. The only bad thing is that I made them Friday, by Monday they were already molding, so you must keep them in the fridge or freezer - 5/26/08

Very Healthy ! I used sugar instead of splenda as well. I would reccommend 2 cups of cranberries instead of 3 as I found 3 cups was too many and quite sour. Delicious ! - 6/26/07

I'm not sure why you're pushing splenda. It's created with Chlorine. Maybe Stevia would be a safer option? - 1/16/12

They sound really good, but I will use fructose in place of the splenda, it tastes and bakes better. - 6/13/07

These muffins are so pretty and VERY good. I used 1.5 cups OJ and next time I think I'll add a bit more Splenda. Going to make some great Christmas goodies! - 11/27/07

I'll definitely try these with the Splenda. Thank you for sharing. They sound delightful. Sorry you had to hear everyone's opinions on using Splenda... this is not really the place to do it. - 6/12/07

I question the use of artificial sweeteners in recipes unless you are diabetic. I prefer to use honey or sugar and deal with the calories - 6/12/07

I made these last week, One, they do NOT look like the picture above. Two, I used orange juice instead of water, and added 1/4 tsp of orange extract to give it the orange flavor. Three, they do go bad VERY quickly, you must must must put them in the fridge or freeze them. - 11/25/13

Gah! why do all these muffin recipes use Splenda? How much is Spark People getting paid by Splenda to push this non-food on us?
Please post more recipes made with real sweeteners, please! - 9/4/13

Used regular flour and all OJ. 3 cups Cranberries made it too tart. Mine took considerably longer than 20 minutes to bake. I used my large muffin pans for 12 muffins. Can't imagine using regular cupcake size pans. Good use for all those cranberries in my freezer! - 5/3/13

Very good and healthy. Next time, I will use 2C instead of 3C of cranberries because there were probably too many cranberries and I will just buy OJ instead of squeezing my own. Definitely, I'll make these again. - 1/19/11

This recipe tastes great, and I just love it. Try to keep some in freezer. I like using dried aprcots also, although this does increase carb content a little. Am going to try fresh blueberries in next batch. - 6/22/07

  • I tried these and they were ok but nothing to rave over, not enough orange flavor and the cranberries overpowering. My recipe uses real sugar, a whole egg and I use white whole wheat flour and the calories per muffin are only 146, so I think I will stick to that for the great taste. - 7/27/14

  • Mine looked nothing like the picture, it was like a big blob. The taste left a little less than something to be desired. Won't make this again unless I use blueberries and lemon juice. - 11/28/13

Sounds delish and I am going grocery shopping today and will buy the few items I don't have to make these. DH is diabetic and even tho there are a few things in here that raise blood sugar, he will be able to eat one of these couple times/week for a treat. He misses muffins with coffee most of all - 1/16/12

These sound tempting but I will try them with a natural sweetener (probably brown sugar)& not a whole cup and if they are too tart, substitute dried cranberries sweetened w/ applejuice. Now that I am wheat-free I will try them with almond meal instead of flour. - 1/16/11
