2 B/S Chicken Breasts - cubed
1/2 onion - sliced
2 cups mushrooms - sliced
1 can Healthy Request Cream of Mushroom
1/2 cup Marsala wine
brown the onions until soft
add the chicken and sautee until browned on all sides - do not cook through yet.
add mushrooms, stir and cover for 2 minutes
add the soup and wine and stir all together.
cover and simmer for 15-20 min or until chicken is thoroughly cooked.
you can thicken with a little cornstarch if you like a thicker sauce.
I eat this over Shirataki Fetuccini noodles. Egg noodles or whole wheat pasta would be good too.
