Introduction

My mother always baked garbanzo beans with tomatoes and bell peppers for Thanksgiving. This quick alternative spices up a meal and is excellent served over curried couscous. My mother always baked garbanzo beans with tomatoes and bell peppers for Thanksgiving. This quick alternative spices up a meal and is excellent served over curried couscous.
Number of Servings: 6

Ingredients

    1 can stewed tomatoes
    1 can or 1.5 cups cooked garbanzo beans (chickpeas)
    Salt/Pepper/Garlic to taste

Directions

Makes about 6 5-oz servings

Rinse beans and combine with tomatoes and spices in saucepan. Heat on medium for 5-10 minutes until warmed through.

Serve over couscous, rice, or on their own as a side dish. Extremely high in protein, minerals and other essential nutrients. Garbanzos are one the world's most perfect foods!
