2 acorn squash
spinach
gorgonzola cheese
olive oil
salt
pepper
Directions
Makes 4 servings
1. Preheat oven to 350*
2. Cut acorn squash in half.
3. Scoop out seeds.
4. Sprinkle dash salt,pepper and olive oil on halves
5. Place halves cut side up in oven in baking dish and cook for 35 min.
6. Cook spinach in pan or microwave.
7. Divide spinach evenly between squash halves once the squash is soft.
8. Sprinkle gorgonzola over spinach and place in oven for additional 10 minutes or until cheese is melted.
