IntroductionMy variation of cottage meat loaf, without the topping. My variation of cottage meat loaf, without the topping.
1 lb lean ground beef
1/2 cup ketchup
1/2 tsp. each salt & black pepper
2 eggs, beaten
2 slices multi-grain bread, grated into crumbs
100 g Onion, finely shopped
2 tsp, prepared mustard (I used Dijon)
Add ground beef. Mix gently but thoroughly.
Line a 9 x 5 inch loaf pan with foil. Press in beef mixture.
Bake at 400 deg F for 35 to 45 minutes or until done.
Drain off fat, Rest meat loaf 5 minutes before serving. Garnish with fresh herbs, if desired.
Good served with Spinach salad, mashed potatoes, and buttered broccoli.
