Orange-Basil Chicken

Number of Servings: 4

Ingredients

    1 t olive oil
    4 (4 oz) skinned, boned chicken breasts
    3/4 c orange juice
    1/4 c dry white wine
    1 T chopped fresh basil
    1/4 t salt
    1/4 t pepper
    1 t garlic
    2 t cornstarch
    1 T water

Directions

Add oil to skill and heat over medium heat. Add chicken; cook two minutes on each side or until browned. Add orange juice through garlic and bring to a boil.
Cover, reduce heat, and simmer 15 minutes or until chicken is done. Remove chicken from pan.
Bring orange juice mixture to a boil. Reduce heat, simmer uncovered 10 minutes or until mixture is reduced to 3/4 c. Combine cornstarch and water, stirring well. Add to juice mixture; cook over medium heat, stirring constantly until thick.
Put chicken on serving plates and spoon sauce over chicken.
