Weight Watchers* Easy Cheesy Lasagna

Introduction

Number of Servings: 6

Ingredients

    1 pound bulk turkey or reduced fat pork sausage
    (optional)
    6 uncooked lasagna noodles
    16 ounces light ricotta cheese
    8 ounces shredded part-skim mozzarella cheese
    8 ounce package sliced mushrooms, or other fresh veggies
    32 ounce jar Classico Tomato Basil pasta sauce

Directions

Cook sausage in skillet, breaking it up as it cooks. Spray a 9 x 12 glass baking dish with Pam. Put in 1 cup of the pasta sauce to entirely cover the bottom. Place on top 3 of the lasagna noodles. Add all cooked sausage, then all ricotta cheese, then all mushrooms. Add half of the mozzarella cheese. Add another cup of the pasta sauce. Place remaining 3 lasagna noodles on top. Add remaining pasta sauce. Cover with aluminum foil and bake in oven at 375 F for one hour. Uncover, add remaining mozzarella cheese, and bake an additional 10 minutes. After removing from oven, let cool for a few minutes before serving.
