Pomegranate-Cranberry Fizzes

Ingredients

    1/4 cup fresh mint leaves
    4 cups lite cran-pomegranate juice
    3/8 cup sugar
    64 oz diet lemon-lime soda

Directions

1. Place mint leaves in a pitcher. Use a wodden spoon to bruise the leaves.

2. Add the cran-pomegranate juice and sugar. Stir to disolve. Cover and chill for 8-24 hours. Place the bottle of lemon-lime soda in the refrigerator too.

3. Use a slotted spoon to remove the mint leaves and discard. (At this stage the syrup can be stored in the refrigerator for up to 48 hours).

4. To serve pour 1/4 cup of the juice into a glass over ice. Top with 1/2 cup of the soda. Add a fresh sprig of mint, as a garnish, if desired.

Note: this recipe can be "fancied up" by using champagne or sparkling grape juice in place of the lemon-lime soda.
