Eggless Chocolate Chip Cookies

Introduction

These yummy cookies can be easily made suitable for vegans by substituting vegan margarine for the butter and by using dairy-free chocolate chips. Earth Balance works very well for the butter substitution, and Trader Joe's makes very good semisweet chips that are dairy free. Ingredients

    1/2 cup shortening
    1/2 cup butter (or vegan margarine)
    1 cup packed brown sugar
    1/2 cup granulated sugar
    1/2 tsp. baking soda
    1/4 tsp. salt
    2 tsp. baking powder
    5 tsp. arrowroot flour
    1/4 cup water
    2 Tbsp. canola oil
    1 tsp. vanilla
    2 1/2 cups all-purpose flour
    1 1/2 cups semisweet chocolate pieces (dairy free)

Directions

Preheat oven to 375 degrees. Beat shortening and butter or margarine on medium to high speed for 30 seconds. Add brown sugar, granulated sugar, baking soda, salt, baking powder, and arrowroot flour; beat until combined. Beat in water, oil, and vanilla until combined. Beat in flour. Stir in chocolate pieces.
Drop dough by rounded teaspoons on ungreased cookie sheets. Bake 8-10 minutes or until edges are golden brown. Cool on wire rack. Makes 73 cookies (more or less).

    Wow! You must have started making these the minute I posted the recipe in order to post a comment just 25 minutes later. One difference between this recipe and many vegan choc chip cookies is that it uses mostly refined ingredients - it's basically an "unhealthy" vegan cookie but oh so yummy!
