Introduction

This is a very good, low fat dip, sour cream substitute. It is also excellent on a whole grain cracker. We enjoy it on dark rye bread also. Excellent on pita. Number of Servings: 15

Ingredients

    1 container low fat plain yogurt. ( It must be free of additives such as cornstarch, pectin or gelatin. The recipe won't work if it is not.).
    1 long english cucumber grated
    1 pressed clove of garlic
    1/2tsp salt

Directions

Place the yogurt in a mesh seive over a bowl cover and place in the fridge for 1-2 days. All the whey will drip out of the yogurt leaving you wilth a creamy, rich, sour cream/cream cheese product that is not tart. Discard the whey. Grate the cucumber and mix in the salt place in a sieve and let most of the moisture drip away, about 10 minutes, squeeze out the excess. Mix cucumber into the yogurt and add garlic. Let flavors develope for about an hour. Each tablespoon is 13 calories or less depending on the fat content of the yogurt. You can use herbs and spices as you like and omit the cucumber and/or leave it plain. It is delicious
