Breakfast Quiche

Introduction

A great protein filled breakfast or easy dinner for 4. You can replace half the eggs with egg whites. Pair with a salad for dinner for extra veggies! A great protein filled breakfast or easy dinner for 4. You can replace half the eggs with egg whites. Pair with a salad for dinner for extra veggies!
Number of Servings: 4

Ingredients

    6 eggs
    3 sausage links (I use pork but turkey works just as well)
    1/2 cup frozed spinach, thawed
    Your favourite veggies. I used peppers, onions, garlic and tomatoes usually
    3 small potatoes chopped or 1.5 cups of frozed hashbrowns
    3 slices cheddar cheese

Directions

In a frying pan, fry the hashbrowns or chopped potatoes

In a separate pan sautee your veggies and sausages until cooked

Combine the potatoes and veggies in a pie dish

Beat 6 eggs in a bowl. Add salt and pepper to taste

Pour eggs over potato/sausage/veggie mixture and top with cheese

In a 350 degree oven, bake until eggs are cooked thoroughly and cheese is bubbly and browning on top.

Makes 4 Servings (1/4 of the dish)
