Introduction

Start with "Wacky Mac" to add color to this easy salad to enjoy on hot summer days. Add just about any veggie you like, too, for color, texture and taste! Ingredients

    Wacky Mac Veggie Spiral pasta
    Chicken Breast (Leftover baked chicken is PERFECT)
    1 medium avocado
    1 medium Vidalia onion
    1 Roma tomato (or grape tomatoes, or cherry tomatoes)
    3-4 peeled baby carrots
    Bernstein's Raspberry Champagne Dressing and Marinade

Directions

Cook about 1/2 package of Wacky Mac according to the directions on the package. Drain and rinse with cool water and set aside.
Chop chicken into cubes.
Peel and slice avocado and onion into small pieces.
Chop tomato into 1/4-inch pieces (or you may use whole grape tomatoes or halved cherry tomatoes.)
Chop baby carrots into small pieces

Mix all incredients in a medium bowl and add enough dressing to coat well -- 2-4 tablespoons. (If the salad looks a little "dry" add dressing a tablespoon at a time, but not so much as to make it oily.)

Refrigerate at least one hour before serving.

Yields approx. 6 1-cup servings.
