Chipotle Polenta

Ingredients

    1 Tbsp Olive Oil
    1 Onion, chopped
    1 Large Carrot Chopped
    1 cup Brocolli Stems Chopped
    1 cup Red Cabbage Chopped
    1/2 cup dry French Lentils (1 cup after prep)
    1 14.5 oz can Stewed Tomatoes
    1 Tbsp Cumin
    1 Tbsp Salt
    1 Tbsp Sour Salt (citric acid)
    1/2 Tbsp Pepper
    1/2 cup dryed Couscous
    1 cup dryed Polenta
    3 Tbsp Fig jam
    2 Tbsp Mexican Chipotle Hot Sauce




Directions

In 1 qt. pan bring french (green) lentils to boil and simmer for 30 minutes. In skillet prepared with olive oil saute the onions, carrot, brocolli together until the onions are clear. Add red cabbage until heated.

Add I can of stewed tomatoes to the lentils at the 15 minute cooking mark and add spices. Add two cups of water and bring back to a boil. Add the sauteed vegetables, dryed couscous and polenta - cook on low for 15 more minutes.

While this is finishing heat in microwave the fig jam, chipotle hot sauce and 1/4 of water.

Dish up polenta mixture and drizzle a little of the fig/chipotle sauce over the top.
