Submitted by: NIGHTINGALE77

Introduction

An Italian chicken pasta salad loaded with veggies and topped with a zesty salad dressing and parmesan cheese. Perfect for a fast but healthy lunch or dinner. Also, a good tip is to prepare 2 oz of pasta for one serving and serve the chicken and veggies over a bed of romaine lettuce for another healthy alternative. * 1/2 chicken breast
    * 1/2 cup of chopped onions
    * 1 cup of chopped tomatoes
    * 1 cup of chopped cucumber
    * 1 clove of garlic
    * 1 tbsp of olive oil
    * 1 tsp of black pepper

Heat a pot of water over the stove. Add the pasta to the pot of boiling water. Chop the garlic, tomatoes, cucumbers and onions. Place 1 tbsp of olive oil in a skillet and add the garlic. Once the skillet heats add the chicken breast seasoned with 1 tsp of black pepper. When the chicken is halfway cooked add the onions to the skillet and finish cooking. Drain the pasta and add it to a bowl with the tomatoes and cucumbers. Cut the chicken into bite size pieces and add to the bowl.
