Low Carb/Sugar Free Peanut Butter Cookies

Introduction

Great, simple and quick recipe - even my non-low carb friends and family love these! For an extra treat, push a sugar free Reese's peanut butter cup into the top of the cookie instead of flattening it. For an extra treat, push a sugar free Reese's peanut butter cup into the top of the cookie instead of flattening it.
Number of Servings: 16

Ingredients

    1 cup Smucker's Natural Peanut Butter
    1 cup Splenda
    1 Egg
    1 tsp. Vanilla extract

Directions

Mix all together into a dense dough.
Roll into 12 walnut-sized balls, put onto baking sheet.
Press fork into top of cookies to flatten and create criss-cross look.
Bake at 350 degrees for 15 - 17 minutes.
Enjoy!

    Nothing missing! I know it's hard to believe, but the ingredients do actually make a stiff dough. Surprising but true!
