Rumbamel's Lemon Curd

Submitted by: RUMBAMEL

Introduction

I got the basic recipe from Taste of Home. You are supposed to use 3 whole eggs and the 1 T is supposed to be lemon zest, but I never have lemon's on hand. I just use what I have. I reduced the sugar and I suppose you can use whatever sweetener you want. It's great on scones or with a plain cookie like macaroons. I got the basic recipe from Taste of Home. • I have never made lemon curd before. This recipe was easy and tastes great. I put some on my oatmeal in the morning and it is like having lemon pie for breakfast. Mmmmm good! - 11/5/11
