1 cup (70 cal per cup) frozen hashbrown potatoes, thawed
1 lg egg
1 thin slice extra lean ham, finely diced
2 Tablespoons low fat cheddar cheese
Spray a small baking dish (I use pyrex 2 cup) with nonstick cooking spray. Mix all ingredients in small bowl. Dump into baking dish. Put uncovered into oven and bake between 30-40 minutes.
