Tuna Tofu Salad

Introduction

Number of Servings: 4

Ingredients

    2 cans tuna packed in water, drained
    1/2 box of firm tofu, drained
    2 scallions, chopped
    1/3 large red pepper, chopped
    3 stalks celery, chopped
    2 tbsp chopped parsley
    2 tbsp sliced green olives
    3 tbsp light mayo
    juice of 1/2 lemon
    salt and pepper

Directions

Slice tofu and lay on a kitchen towel to drain. Press gently to remove more water. Put the tofu and drained tuna in a bowl and mash together with a fork. Season with salt, pepper and lemon juice. Add remaining ingredients and mix in.
