Baked Bean Bake

Ingredients

    1 can kidney beans (2 cups) rinsed & drained
    1 can lima beans (or 2 cups frozen) rinsed and drained if canned
    1 can vegetarian baked beans with sauce
    1 tsp canola oil
    2 tsp garlic
    2 cups chopped onion
    1 cup chopped green pepper
    1 tsp soy sauce
    2 tbsp molasses
    1/2 tsp ginger
    1 tbsp flour

Directions

Preheat oven to 325.

Combine kidney, lima, and baked beans in a 2 quart square baking dish.

In a large frying pan, heat the oil and saute the onion, garlic, and green pepper until the onions are translucent. Stir in flour, then add molasses, soy sauce, and ginger. Bring to a boil.

Pour seasoned vegetable mixture over the beans and stir to combine.

Cover and bake for 1 hour on the middle rack of the oven. Uncover and bake 30 minutes more or until the mixture thickens.

Makes 9 servings.
