Hamburger & Vidalia Onion Casserole

Introduction

I suppose you could use regular onions, but the Vidalia (when you can get them) are nice and sweet when caramelized. I suppose you could use regular onions, but the Vidalia (when you can get them) are nice and sweet when caramelized.
Number of Servings: 6

Ingredients

    1 Pound of Lean Ground Beef
    2 Cans of Low Fat Cream of Mushroom Soup
    10 Cups of Hash Browns (thawed)
    3 Vidalia Onions (chopped)
    3 Tablespoons of I Can't Believe It's Not Butter - Light

Directions

In a Large Bowl, mix the can of soup and the hash browns well.

Cook the onions in the butter substitute until caramelized. Add to Large Bowl holding the soup and hash browns.

Cook Ground Beef, drain and add to Large Bowl with rest of the ingredients. Mix well.

Spray 9 x 12 Baking Pan with non-stick spray. Dump the contents of the Large Bowl into the Baking Pan.

Bake at 350 for 30 minutes. Serves 6
(note: obviously this would be better with cheese melted on top, but I was trying to keep the calories around 500 cal. per serving - If you don't care about the calories... knock yourself out by putting a couple of cups of shredded cheese on top)
