Black Bean & Tomato Burrito

Introduction

Number of Servings: 6

Ingredients

    1 can black beans
    1 can fire roasted tomatoes
    1 cup shredded pepper jack cheese
    4 flour tortillas
    2 Tbsp Caribbean jerk spice
    2 cups chopped fresh spinach
    1 large red bell pepper

Directions

Spray a saucepan with olive oil cooking spray and add 1/2 of the jerk spice. Heat until the pan is hot, then add strained tomatoes. Strain and rinse the black beans, then add to the pan. Add the remainder of the jerk spice and cook until liquid is almost gone. Add 1/6 of bean mixture to each tortilla, then add a portion of peppers and spinach and top with 1/6 of the cheese. Fold and enjoy!
