Pumpkin Pie Muffins

Introduction

Tastes just like pumpkin pie, but in a chewy and portable muffin. Great for breakfast on the go! Adapted from recipe at The Gluten Free Goddess' blog. Ingredients

    1 1/4 c canned pumpkin
    1/4 c safflower oil (or olive)
    3/4 c brown sugar
    2 tsp vanilla
    2 EnerG eggs, made with warm water
    1/4 c coconut milk
    1/2 c buckwheat flour
    1/4 c each brown and white rice flour
    1/4 c amaranth flour
    1/4 c potato starch
    1 tsp baking soda
    1 1/2 tsp baking powder
    1/2 tsp sea salt
    1 tsp xanthan gum
    3/4 tsp cinnamon
    1/4 tsp allspice
    1/4 tsp nutmeg


Directions

Mix wet ingredients in medium bowl. Whisk dry ingredients together in large bowl. Add wet to dry and stir until combined. Fill muffin cups and bake at 350 for 22 minutes, until toothpick comes out clean. Yum! Makes 14 regular muffins.
