Introduction

Number of Servings: 8

Ingredients

    1 1/3 cup couscous
    1 cup chicken stock
    1/3 cup lemon juice
    4 oz crumbled goat cheese
    2 cups cherry tomatoes, halved
    2 medium cucumbers, peeled and chopped
    4 tbsp Parsley, chopped
    1 tbsp Mint, chopped
    salt and pepper to taste

Directions

Boil Chicken Stock, mix with couscous. Add lemon Juice, stir and cover for 5 minutes. Stir again, add tomatoes, cucumber, goat cheese, parsley and mint. Enjoy!

Makes 8 1-cup servings
