Low fat version of SPStepf SW Ckn Soup

Ingredients

    * Chicken Breast, no skin, 8 ounces (remove)
    * Onions, raw, 1 small (remove)
    * Garlic, 3 clove (remove)
    * Jalapeno Peppers, 1 pepper (remove)
    * Green Peppers (bell peppers), 0.5 cup, chopped (remove)
    * *Cumin seed, 1 tsp (remove)
    * Olive Oil, 1 1tsp (remove)
    * Del Monte Diced Tomatoes, No Salt Added, 2 cup (remove)
    * Swanson Chicken Broth 99% Fat Free, 4 cup (remove)
    * Cilantro, dried, 8 tbsp (remove)
    * Lime Juice, 1 lime yields (remove)
    * Bush's, Black Beans, 1 cup (remove)
    * Uncle Ben's Instant Whole Grain Brown Rice, 2 cup (remove)
    * Spinach, fresh, 4 cup (remove)

Directions

Heat oil in a large soup pot set over medium-high flame, and add garlic, onion and peppers. Cook until soft and starting to get some color, about 5 minutes. Lower heat to medium. Add chicken and cumin and cook another five minutes. Add chicken broth, beans and tomatoes. Raise heat to medium-high and simmer for 10 minutes. Remove from heat and add lime juice, stirring well.

To serve: place 1/2 c rice in bottom of each bowl.
Recipe makes 8 servings 1 cup each
