Cinco De Mayo Salad

Introduction

Original recipe came from Kraft Foods to celebrate Cinco De Mayo.
Changed it a little, but it did not change the taste. Best when made ahead so it can sit in the refrigerator for several hours.

Number of Servings: 2

Ingredients

    1 cup shredded lettuce ( red or green leaf or some of both)
    1 cup black beans, drained and rinsed
    1 cup yogurt, Fat Free Plain
    1 cup Salsa, chunky style
    1 cup tomato, chopped
    2 green onions, inc. green top, chopped
    1/4 cup cheese, Sargento Reduced Fat 4 cheese Mexican

Directions

In a glass bowl layer lettuces, beans and tomatoes.

Mix salsa and yogurt and spread over the salad to the edges to seal. Sprinkle with the grated cheese and green onions. Refrigerate for several hours.

Sprinkle with crushed chips right before taking to the table, toss before serving.
