Gazpacho

Introduction

Number of Servings: 6

Ingredients

    5 tomatoes on the vine
    2 cans (11 oz.) of Campbell's Tomato Juice
    1 medium cucumber
    1/4 red onion
    1 bunch scallions
    1 clove garlic
    2 T. extra virgin olive oil
    1/8 t. cayenne pepper
    1 t. black pepper
    1 drop tabasco sauce

Directions

Puree 4 tomatoes (I used small tomatoes on the vine) in a blender. Dice the remaining tomato. Add to the pureed tomatoes.

Add in 2 cans (11 oz. total) of Campbell's Tomato Juice.

Peel cucumber, dice, and add.
Dice 1/4 c. of red onions and add to tomato mixture.
Dice scallions and 1 clove of garlic, add.
Add olive oil, cayenne & black pepper, and one drop of tabasco sauce.

Mixx well and chill. Serve cold.
