Savory Curry Pork Muffins

Ingredients

2 cups cooked brown rice
150 grams cooked, ut up porktenderloin
1 tbsp dried parsley
1 1/2 tsp curry powder
3/4 cup low fat sour cream
2 tsp low sodium soy sauce
1 tbsp lemon juice
3 egg whites
Directions
Preheat oven to 375 degrees. Spray a muffin tin with non-stick spray.
Combine all ingredients (except egg whites) in a bowl. In another bowl, beat egg whites until stiff peaks form. Fold into mixture. Spoon into muffin tin.
Bake for 35-40 minutes.
