Slow Cooked Southwest Chicken

Introduction

This is an easy and delicious recipe and its filling too! I like to add a dollop of reduced fat or fat free sour cream. This is an easy and delicious recipe and its filling too! I like to add a dollop of reduced fat or fat free sour cream.
Number of Servings: 6

Ingredients

    2 cans of black beans rinsed and drained (if you like more liquid, don't rinse and drain)
    1 can of chicken broth (reduced sodium preferred)
    1 can diced tomatoes with mild green chilies undrained
    1/2 lb. boneless skinless chicken breast
    1 jar (8 oz) chunky salsa
    1 cup frozen corn
    1 Tbsp dried parsley
    1 tsp. ground cumin
    1/4 tsp. black pepper
    3 Cups of hot cooked rice
    Low fat or fat free sour cream (optional)

Directions

1. In a 2 or 3 quart slow cooker, combine all ingredients. Cover and cook on low for 6-8 hours or until chicken shreds easily with two forks.

2. Shred chicken and return to the slow cooker, heat thoroughly. Serve with rice.
