1 cup uncooked pearl barley,
1/2 block extra firm tofu (8 oz)
1 tsp garlic powder
2 tsp Italian seasoning
1/4 cup mushroom pieces
3 tbsp President Fat Free Crumbled Feta
12 grapes tomatoes
1/2 peeled cucumber
1/2 cup cider vinegar
When barley is tender rinse in cold water until cool. Mix barely with veggies and the rest (1/4 cup) vinegar. Allow to marinate at least 10 minutes and serve chilled.
