Spinach, Tomato & Cheese Omelette

Introduction

Number of Servings: 1

Ingredients

    1 c. egg substitute
    1/4 tsp. chopped garlic
    1/4 tsp. dried onion powder
    salt and pepper to taste

    1/4 c. fat free cheddar cheese
    1/4 c. chopped tomatoes
    1/3 c. spinach

Directions

Mix the egg substitute and seasonings in a bowl. Spray nonstick pan with Pam and heat on medium heat. Pour egg mixture into pan and then add cheese, tomatoes and spinach once eggs set up a bit. Cook until mostly set up and then fold over one side and continue cooking until fully cooked.

Makes one large omelet.

You can add any vegetables you want really. I love feta and broccoli as a combination. Or you can add extra herbs like an italian blend.
