Introduction

I really wanted taco salad so I decided to try a chicken version. Decent on calories and good on protein. Ingredients

    Chicken breast, lettuce, tomatoes, salsa, tortilla chips, mozzerella cheese, taco seasoning, and sour cream

Directions

boil chicken, when done shredd and simmer with taco seasoning. Dice lettuce, tomatoes and layer with shredded chicken on top of the tortilla chips. topped with salsa and sour cream

  • I added a couple of cans of diced green chiles to the chicken. I also did up 4 lbs of chicken breasts. The family can have tacos or burittos with it and I will have the salad. Yum! - 4/26/10
