1 tbsp olive oil
1 lb boneless skinless chicken breast, chopped into small cubes
2 cups egg noodles
1 can cream of chicken soup
1 3/4 cups chicken broth
1 cup baby carrots, sliced into halves
1 cup canned or frozen peas
Add chicken broth and cream of chicken soup and mix until smooth. Add egg noddles, peas and carrots.
Bring to a boil, then reduce and simmer for approximately 15-20 minutes or until sauce is thick, vegetables are cooked through and noodles are tender.
Makes 4 servings.
