Greek Chicken Pasta

Introduction

This original recipe calls for Orzo pasta, but I didn't have that, so I used whole wheat linguine instead. The wyhole wheat pasta is what is in this calculation. Ingredients

    1 pound chicken tenders, seasoned with Greek seasoning, seared in pan until done
    13 oz. of whole wheat linguine pasta cooked
    Juice of one lemon
    1 cucumber, peeled and chopped
    4 oz can sliced black olives
    2-3 Roma tomatoes, chopped
    1/c chopped red onion
    1/3 cup Low-Fat crumbled Feta cheese

Directions

After cooking chicken, cut into bite size pieces. Chop vegetables and cook pasta according to package directions. In bowl, combine lemon, olive oil, mustard and honey. Finely grate outside of the lemon for dressing = about 1 tsp zest and add to dressing. Toss together chicken, pasta, vegetables and cheese. Toss with lemon dressing. Serve with dinner rolls. Makes 7 servings at approximately 1-1.5 cups each.
