Egg Casserole

Introduction

1 container egg beaters
2 cups diced zucchini
2 cups sliced mushrooms
1 package frozen spinach, defrosted
8 ounces ham, diced
1 container egg beaters
2 cups diced zucchini
2 cups sliced mushrooms
1 package frozen spinach, defrosted
8 ounces ham, diced

Number of Servings: 4

Ingredients

    2 cups diced zucchini, with peel
    2 cups sliced mushrooms
    1 package frozen spinach, defrosted
    8 ounces ham, diced
    1 container egg beaters

Directions

Preheat oven to 375.
Spray cake pan w/ non stick spray
Saute zucchini, mushrooms and spinach briefly in olive oil spray
put veggies in bowl allow to cool slghtly
add container of egg beaters and ham
stir
and pour into cake pan
bake at 375 for about 30 minutes til set

(can also be cooked in muffin tins as well
this freezes well and defrosts quickly for an easy breakfast during the week
