Low Carb Buffalo Chicken Fingers

Ingredients

    Julian Smartcarb Breadcrumbs (1/4 c. serv), 3 serving
    Chicken Breast, no skin, 16 ounces (cut into fingers)
    Egg white, 1 serving
    Flour, whole grain, 3 tbsp.
    Smart Balance, Smart Balance Light Buttery Spread, 1 Tbsp, 4 serving
    1 tbsp. Frank's Red Hot Sauce
    1/3 c. Frank's Red Hot Sauce

Directions

Cut chicken breast into strips. Place flour into large ziplock bag and toss in chicken. Shake to coat. Meanwhile, whisk egg white until foamy and add 1 tbsp. Frank's red hot. Dip each chicken piece into the egg and then roll in the breadcrumbs placing on a greased baking sheet covered with aluminum foil. Continue until all pieces have been coated and then bake at 400 degrees until done.

To make Buffalo Sauce: Melt 4 tbsp. Smartbalance spread with 1/3 c. Frank's Red Hot Sauce and mix.

Assemble fingers: When fingers are done and crispy, toss carefully in Buffalo Sauce. Serve with celery sticks and blue cheese dressing.
