2 tbs melted butter
5 large eggs, beaten
1 cup cottage cheese
1/2 cup shredded cheddar cheese
4oz can diced green chiles
1/4 cup flour
1/2 tsp baking powder
Salt & pepper to taste
***You can also add a few drops of hot sauce if you like it spicy***
Wisk together all ingredients and pour 1/3 cup of mixter into each muffin cup. Bake 25-30 mins until set.
Makes 6-7 muffins
