Rice & Egg Salad

Number of Servings: 2

Ingredients

    1/2 cooked rice
    1 hard boiled egg
    1/4 cup chopped celery
    1/4 cup raw onion
    3 Table spoons of Low Cal Mayo
    1 Table spoon of Sweet Pickle Relish
    Salt & Pepper to taste.
    Lettuce Leaves

Directions

In a Mixing bowl, Combine the first 4 ingredients. In another bowl, combine the mayo, relish,salt & pepper. Add to Rice Mixture...toss to coat. Put into two custard cups or a half cup mold. Cover and Refridgerate until chilled. Before serving un-mold onto plate with lettuce.
Makes 2 servings.
